SWEET & SOUR PARCELS

Different types of fish can be used for each parcel so you can compare taste and texture.

INGREDIENTS:

2 x 175g (6oz) haddock or whiting fillets, fresh or defrosted
 
10mI (2 teaspoons) lemon juice
 
salt and pepper
 
50g (2oz) button mushrooms, wiped and sliced
 
3 spring onions, washed, trimmed and chopped
 
90ml (6 tablespoons) ready made
sweet and sour sauce

METHOD:

1.
Cut 2 large squares of foil and lay a fish fillet on each square. Sprinkle with lemon juice and season lightly with salt and pepper.
2.
Place the mushrooms, onions and sauce in a small saucepan and heat gently for 2-3 minutes.
3.
Spoon the sauce and vegetable mixture over the fish fillets, seal the foil to make a parcel.
4.
Place the parcels in a steamer over a pan of boiling water and cook for 10 minutes.
5.
Serve with baked potatoes and green vegetables.
